🌽 If you're looking for some creamy comfort food, this easy pasta recipe is so cozy and flavourful!

​Recipe:
Cook around 1/2 lb. pasta. Meanwhile, add 1 tsp oil to pan with 1 onion finely chopped. Cook until translucent, add 1.5 cups corn, cook another 3 min. Add 3/4 pint sliced tomatoes. Add 2 cups cashews (that you've boiled in water for 15 min) to a blender with 2 cups of very warm vegetable broth, 1 tsp dijon mustard, 1 tsp each dried basil, paprika or chili powder, garlic powder, onion powder and oregano. Add 1.5 tsp cumin, 1/4 tsp thyme and turmeric (optional), and 3/4 - 1 tsp kosher salt to taste. Add optional 3 tsp nutritional yeast. Blend until very smooth and serve with hot pasta and veggie mixture. Top with fresh chopped cilantro or parsley if you have it.

Recipe adapted from minimalistbaker

Follow us vegspirationfeed for Daily vegan recipes

3 batches flax egg (3 Tbsp flaxseed meal + 7 ½ Tbsp water as original recipe is written)

1/3 cup melted coconut oil* (or sub other neutral oil)

1/4 cup maple syrup

1 scant cup unsweetened applesauce

1/2 cup organic brown sugar* (or sub coconut sugar)

1/4 cup cane sugar* (or sub coconut sugar)

3/4 tsp sea salt

1 1/2 tsp baking soda

1 1/2 tsp baking powder

1 tsp ground cinnamon

3/4 - 1 cup plain unsweetened almond milk* (or other non-dairy unsweetened milk)

1 1 /2 cups loosely packed grated carrot

1 1/2 cups almond flour*

1 1/2 cups gluten-free flour blend*

3/4 cup chopped raw walnuts* (if preferred, omit, or sub 1/2 cup (70 g) raisins)

Instructions

Preheat oven to 350 degrees F (176 C). Butter and flour two 8-inch, 1 9x13-inch, or 3 6-inch round pans with coconut oil or vegan cooking spray and dust with gluten-free flour (adjust number/size of pans if altering batch size). Shake out excess. Set aside.

Prepare flax eggs in a large mixing bowl. To flax eggs, add oil and maple syrup and whisk to combine. Next, add applesauce, sugars, salt, baking soda, baking powder, and cinnamon and whisk to combine.

Add lesser amount of almond milk (3/4 cup or 180 ml as original recipe is written // adjust if altering batch size) and stir. Add grated carrot and stir. Then add almond flour and gluten-free flour blend and stir. The batter should be thick but pourable. If too thick, add remaining almond milk 1/4 cup or 60 ml as original recipe is written // adjust if altering batch size). If adding walnuts, add at this time and stir.

Divide evenly among cake pan(s). Bake for 40-50 minutes or until deep golden brown and a toothpick inserted into the center comes out clean. When you press on the top, it shouldn’t feel too spongy, so don’t be afraid of over-baking! The gluten-free blend just takes a little longer to bake. Also, note that the size of pan you use will vary baking time.

Remove from oven and let rest in the pans for 15 minutes. Then carefully run a knife along the edges and gently invert onto cooling racks to let cool completely.

♡ 1-2 TL Himbeerpulver ⠀
oder anderes Fruchtpulver⠀⠀
♡ Prise Salz⠀⠀
♡ 150-175 ml Mandeldrink⠀⠀
♡ Kokosöl zum Ausbacken ⠀⠀

Mehl, Stärke und Backpulver sieben. Ich gebe immer noch eine Messerspitze Natron dazu (funktioniert aber auch ohne). Die restlichen Zutaten hinzugeben und mit einem Schneebesen schell und gründlich verrühren. Pancakes in Kokosöl ausbacken. Bei niedriger/mittlerer Hitze backen, dann behalten sie ihre Farbe und werden nicht braun.⠀

happy sunday!! seeing how everyone's been baking banana bread, i thought why not switch it up to make a big fat banana cake 🤤 and it turned out INCREDIBLE. best thing i've baked in my life (and i bake a lot lol😳) it's super light, fluffy, and that lemon frosting is to dieeee for🥵🥵🥵

𝗕𝗔𝗡𝗔𝗡𝗔 𝗖𝗔𝗞𝗘⁣

ingredients:⁣

🍌 banana cake:⁣
344g all-purpose flour⁣
200g) white sugar⁣
100g brown sugar⁣
1 tsp baking soda⁣
1 tsp baking powder⁣
1/2 tsp salt⁣
1/2 tsp cinnamon⁣
160ml buttermilk (1 tbsp lemon juice + 145 ml soy milk)⁣
4 medium size ripe bananas ⁣
60ml coconut oil⁣
1 chia egg (1 tbsp chia seeds + 3 tbsp hot water)⁣
2 tsp vanilla extract⁣

🍋 lemon frosting:⁣
210g icing sugar⁣
38g butter⁣
2 tbsp lemon juice ⁣
walnuts or pecans to decorate⁣

method: ⁣
1. preheat the oven to 180°C and grease a baking tin.⁣
2. soft the flour into a mixing bowl and add the white and brown sugar, baking powder, baking soda, salt and cinnamon and mix together.⁣
3. prepare your chia egg and allow to sit for a minute to become gloopy.⁣
4. prepare the vegan buttermilk and allow to sit for a few minutes to curdle.⁣
5. melt the coconut oil then add to a blender jug. add the bananas and vegan buttermilk to the blender jug and blend for 2/3 seconds until combined. DO NOT OVERBLEND!!⁣
6. pour the blended ingredients over the dry ingredients and mix in.⁣
7. add the chia egg and vanilla extract and mix evenly, removing any lumps.⁣
8. pour the batter into the baking tin and evenly spread out.⁣
9. bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. ⁣
10. leave to cool completely before frosting. Don’t take the cake out the tin too early or it’ll fall apart!!!⁣
11. make the frosting by adding the icing sugar, vegan butter and lemon juice to the bowl and mix (I used a spoon to do this). *to increase thickness, add more icing sugar. to decrease thickness, add a couple drops of lemon juice.*⁣
12. once the cake has cooled, frost and decorate with the nuts of your choice!⁣
